Ingredients:
Large flour tortillas
Shredded cheese (cheddar, Monterey jack, mozzarella, or a blend)
Cooked meat (chicken, steak, ground beef, pulled pork — your choice)
Optional: sautéed onions, peppers, jalapeños, beans, etc.
Butter or oil for the griddle
Grill press or spatula for smashing
🔥 Instructions:
1. Preheat the Blackstone:
Medium heat across the surface. Lightly oil or butter the griddle.
2. Assemble Quesadillas:
On one tortilla: layer cheese → cooked meat → any extras → more cheese → top with another tortilla.
Or fold one large tortilla in half if you want a half-moon style.
3. Grill & Press:
Place assembled quesadillas on the hot griddle.
Use a grill press (like in your pic) or a heavy spatula to press them slightly — this makes them crispy and golden!
Cook 2–3 minutes per side until golden brown and cheese is melted.
4. Flip Carefully:
Use a wide spatula to flip once golden.
Cook the other side 2–3 minutes.
5. Remove & Rest:
Take off the griddle and let sit 1–2 min before cutting (helps everything set up).
6. Slice & Serve:
Cut into wedges and serve with:
Sour cream
Salsa or pico de gallo
Guacamole
Hot sauce
✅ Tips:
Want that extra golden crust? Spread a little mayo or butter on the outside of the tortillas before grilling.
Add a bit of taco seasoning to your meat for more flavor.
