1. Clean seeds well
Rinse the seeds in a colander, removing all pumpkin pulp. Pat dry with a towel. For best roasting, let them air-dry for an hour or more.
2. Season seeds
In a bowl, toss the dry seeds with olive oil or melted butter, salt, and your choice of spices.

2. Lightly oil the surface.
3. Spread the seeds out in a single layer on the griddle.
