Instructions
- Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
- Bake the bacon for 15 minutes or until crispy. Drain on paper towels and set it aside to cool. Crumble it into pieces.
- While the bacon cooks, melt the butter in a skillet over medium heat. Pour the whisked eggs in and let them sit for a few seconds. Reduce the heat to low. Stir the eggs from the outer edge in a circular motion until cooked and fluffy.
- Assemble the tacos starting with the warmed tortillas, followed by eggs, cheddar cheese, salsa, avocado, cherry tomatoes, green onions, and cilantro. Serve immediately and enjoy!
