Ingredients:
For the Beef Marinade:
1.5 lbs flank steak, sirloin, or flat iron steak, thinly sliced against the grain
2 tbsp soy sauce
1 tbsp cornstarch
1 tbsp rice wine vinegar
1 tsp sesame oil
1 clove garlic, minced
1/2 tsp grated fresh ginger
1/4 tsp black pepper
For the Stir Fry Sauce:
1/2 cup beef broth
1/4 cup soy sauce
2 tbsp oyster sauce (or hoisin sauce for a similar flavor)
1 tbsp brown sugar
1 tsp sesame oil
1 tsp grated fresh ginger
2 cloves garlic, minced
1 tbsp cornstarch (mixed with 2 tbsp cold water to form a slurry)
For the Stir Fry:
2 tbsp olive oil or vegetable oil, divided
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 cup broccoli florets, cut into small pieces
1 cup snap peas
1 large carrot, julienned or thinly sliced
1/2 red onion, thinly sliced
2 cups fresh spinach or bok choy, roughly chopped (add at the very end)
Cooked rice or noodles, for serving
Chopped green onions and sesame seeds, for garnish
Equipment:
Blackstone Griddle
Spatulas/Scrapers
Large bowl for marinating
Small bowl for sauce
Small bowl for cornstarch slurry
Instructions:
Marinate the Beef: In a large bowl, combine the thinly sliced beef with soy sauce, cornstarch, rice wine vinegar, sesame oil, minced garlic, grated ginger, and black pepper. Toss well to ensure all beef is coated. Cover and refrigerate for at least 15-30 minutes. The cornstarch is key for tenderizing the beef and creating a nice crust.
Prepare the Stir Fry Sauce: In a separate small bowl, whisk together the beef broth, soy sauce, oyster sauce, brown sugar, sesame oil, grated ginger, and minced garlic. Set aside. Prepare the cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water) in another small bowl; this will be added at the end to thicken the sauce.
Preheat the Blackstone: Preheat your Blackstone griddle to medium-high heat. Add 1 tablespoon of olive oil or vegetable oil to the cooking surface.
Cook the Beef: Once the griddle is hot, spread the marinated beef in a single layer. Cook for 2-3 minutes per side, or until beautifully browned and cooked to your desired doneness. Avoid overcooking, as beef can become tough. Remove the cooked beef from the griddle and set aside.
