Ingredients (for 4 servings)
🐔 For the Chicken:
4 boneless, skinless chicken breasts
Salt & pepper (or your favorite chicken seasoning)
1 tablespoon olive oil (for the griddle)
4 slices bacon
1 cup sliced mushrooms
2 cups shredded Colby Jack or cheddar blend cheese
🍯 Honey Mustard Sauce:
½ cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon lemon juice (optional)

🔥 Instructions – Blackstone Style
1. Make the Sauce (first!):
In a bowl, mix:
½ cup mayo
2 tbsp Dijon mustard
2 tbsp honey
(optional) 1 tsp lemon juice
Stir well and refrigerate.

2. Preheat Your Blackstone:
Set burners to medium heat. Let it preheat for about 5–7 minutes.

3. Cook the Bacon:
Lay bacon slices directly on the griddle.
Cook until crispy, then remove and set aside on paper towels.
✅ Tip: Use the bacon grease to cook the mushrooms!

4. Sauté the Mushrooms:
Add sliced mushrooms into the bacon grease.
Cook until golden brown and soft (4–5 minutes). Move to the cooler side of the griddle.

5. Cook the Chicken:
Lightly oil the griddle and season your chicken breasts.
Grill chicken for 6–8 minutes per side (depending on thickness) until fully cooked (internal temp 165°F / 74°C).
Optional: Press with a bacon press for even sear.

6. Assemble on the Griddle:
Spoon honey mustard sauce on each chicken breast.
Add sautéed mushrooms.
Place 1 slice of crispy bacon on each.
Sprinkle plenty of cheese over the top.
Cover with a melting dome or large metal bowl to melt the cheese (about 1–2 minutes).
