Ingredients:
• 2 flatbreads or naan (store-bought or homemade)
• 1 cooked chicken breast, diced (grilled or rotisserie)
• 1/2 cup BBQ sauce (plus extra for drizzle)
• 1 cup shredded mozzarella cheese
• 1/4 cup red onions, thinly sliced
• 1 tbsp olive oil or melted butter
• Fresh cilantro or parsley (chopped, for garnish)
Instructions:
1. Preheat the Blackstone:
• Set your griddle to medium heat and allow it to warm up fully.
2. Prepare the Chicken:
• Toss the diced chicken in 2–3 tbsp of BBQ sauce until coated.
3. Crisp the Flatbread:
• Lightly brush both sides of the flatbread with oil or butter.
• Toast on the griddle for about 1–2 minutes per side until just crisp.
4. Assemble the Pizza:
• On the toasted side, spread a thin layer of BBQ sauce.
• Sprinkle mozzarella evenly across the top.
• Add the BBQ chicken, red onions, and a few extra cheese sprinkles.
5. Melt & Cook:
• Lower the heat or move to a cooler zone.
• Cover with a melting dome or metal bowl.
• Let cook for 5–7 minutes, or until the cheese is melted and bubbly.
6. Finish:
• Drizzle with a bit more BBQ sauce.
• Garnish with chopped fresh cilantro or parsley.
• Slice and serve hot!
