Ingredients:
1 lb ground beef (or Italian sausage for more flavor)
1 package (16 oz) potato gnocchi (fresh or shelf-stable)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1 small onion, sliced thin
2–3 tbsp olive oil (or butter)
2 cloves garlic, minced (or 1 tsp garlic powder)
1 tsp Italian seasoning (oregano, basil, thyme)
Salt & black pepper to taste
½ cup shredded mozzarella or Parmesan (optional)
Crushed red pepper flakes (optional, for heat)

Instructions:
1. Prep the Gnocchi
If using shelf-stable gnocchi, boil for 2 minutes just until they float, then drain. (If using fresh, you can skip the pre-boil and go straight to griddle.)
2. Cook the Beef
Preheat your Blackstone (medium-high heat).
Add ground beef, season lightly with salt & pepper, and cook until browned. Push to the side.
3. Cook the Veggies
Add a drizzle of oil. Toss in peppers and onion.
Cook until softened and slightly charred (5–6 minutes). Push to the side.
4. Crisp the Gnocchi
Add gnocchi to the griddle with a little oil/butter.
Cook until golden and slightly crispy on the outside.
5. Combine Everything
Mix beef, peppers, onion, and gnocchi together.
Add garlic, Italian seasoning, and optional red pepper flakes.
Stir until everything is coated and heated through.
