Ingredients:
For the Chicken:
2-3 boneless chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp onion powder
Salt & black pepper to taste
For the Mac & Cheese:
2 cups cooked macaroni (pre-boiled)
1/4 cup milk
1 tbsp butter
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack or mozzarella
Optional: pinch of paprika or hot sauce
For the Veggies:
1 zucchini, sliced
1 yellow squash, sliced
1 tbsp olive oil or butter
Salt, pepper, garlic powder to taste
👨🍳 Instructions:
1. Prep all your ingredients: Pre-cook the pasta and slice the veggies. Season the chicken on both sides.
2. Preheat your Blackstone: Medium heat zones across the griddle.
3. Start with the chicken:
Add a bit of oil to the griddle.
Place the seasoned chicken on and cook 5-7 minutes per side until internal temp hits 165°F (74°C). Move to a warm spot.
4. Mac & Cheese on the griddle:
Toss cooked macaroni onto a lightly oiled or buttered section of the griddle.
Stir in milk and butter until creamy.
Add shredded cheese on top and gently fold until melted and gooey.
Let some bits get crispy if desired!
5. Grill the Veggies:
Add oil or butter to another part of the griddle.
Toss on zucchini and squash slices.
Season and cook until just tender and lightly charred (about 4-5 minutes).
