Ingredients:
2–3 cups cooked, shredded beef (birria, barbacoa, or slow-cooked chuck roast)
Corn or flour tortillas
1½ cups shredded Mexican cheese blend (or Oaxaca, mozzarella, or Monterey Jack)
½ cup white onion, finely diced
½ cup fresh cilantro, chopped
Oil or butter for the griddle
(Optional: birria consommé for dipping if you’ve made birria-style beef)
Instructions:
1. Prep the Griddle
Heat your Blackstone to medium-high. Lightly oil the surface.
2. Toast & Cheese the Tortilla
Place a tortilla on the hot griddle.
Sprinkle a generous layer of shredded cheese on top and let it melt.
3. Add the Beef
Once the cheese is melty, add shredded beef evenly over the tortilla.
Let it cook a couple of minutes so the tortilla crisps and the beef warms.
4. Top It
Sprinkle fresh chopped onion and cilantro over the beef.
(Optional: add a little squeeze of lime for brightness).
