Ingredients:
1 lb white American cheese (cubed — like Velveeta Blanco or deli slices)
1/2 lb Pepper Jack cheese (cubed)
1/2 lb ground beef (cooked and seasoned)
1 small can diced green chiles
1/4 cup pickled jalapeños (or more if you like heat)
1/4 cup fresh cilantro, chopped
1/3 to 1/2 cup milk or half & half (for creaminess)
Optional extras:
Diced tomatoes or Rotel
Hot sauce or taco seasoning in beef
Diced onions

🔥 Instructions (Blackstone Griddle):
1. Cook the beef
On the griddle, cook ground beef until browned. Season with taco seasoning, salt, or garlic powder if you want more flavor.
2. Assemble in a foil pan
In a disposable aluminum pan, add:
Cubed cheeses
Cooked ground beef
Green chiles
Jalapeños
Milk/half & half
Half the cilantro
3. Heat on the griddle
Place the pan directly on a medium-low heat zone of the Blackstone. Stir every few minutes until the cheese melts into a creamy dip (about 10–15 min).
4. Adjust consistency
If it’s too thick, stir in more milk until it’s perfect for dipping.
5. Top & serve
Sprinkle fresh cilantro over the top and serve warm with tortilla chips, warm tortillas, or even drizzle over nachos or burgers!
