Ingredients:
1 lb ground beef
1 lb ground sausage (or seasoned ground pork)
1 large onion, sliced
2 bell peppers (green/red), sliced
8 slices provolone cheese (or mozzarella)
Flour tortillas
Olive oil or butter
Salt & pepper
Optional: garlic powder, paprika, chili flakes, or steak seasoning

Instructions:
1. Preheat the Blackstone
Heat your griddle on medium-high heat and oil lightly.
2. Cook the peppers & onions
Add a drizzle of oil.
Toss on the sliced peppers and onions.
Season with salt, pepper, and a pinch of garlic powder.
Cook until softened and slightly charred (about 8–10 minutes).
Push to one side.
3. Cook the meats
On another section, cook the ground beef. Season with salt, pepper, and optional steak seasoning.
On a different spot, cook the ground sausage until browned.
Break both meats into crumbles.
4. Melt the cheese
Once beef is cooked, spread it evenly and lay provolone slices on top.
Let it melt into the meat (you can cover with a dome for faster melting).
5. Warm the tortillas
Place flour tortillas on the griddle for 20–30 seconds per side until warm and flexible.
6. Assemble
Add cheesy beef (or sausage) to the tortilla.
Top with grilled peppers and onions.
Roll it up like a wrap or fold it like a taco.
