Ingredients:
• 2–3 packs of frozen shredded hash browns (or fresh grated potatoes)
• 12–16 eggs, scrambled
• 2 cups shredded cheese (cheddar, mozzarella, or a blend)
• 1 lb cooked bacon, chopped
• 1 lb breakfast sausage, cooked and crumbled
• Cooking oil or butter
• Salt and pepper to taste

Instructions:
1. Preheat the Griddle:
• Set your Blackstone or flat-top grill to medium heat.
• Add a bit of oil or butter to prevent sticking.
2. Cook the Hash Browns:
• Spread hash browns evenly over the hot griddle.
• Season with salt and pepper.
• Let them crisp up for 5–8 minutes, then flip and cook the other side.
3. Add the Meats:
• Sprinkle the cooked bacon and sausage over the potatoes.
4. Pour the Eggs:
• Pour beaten eggs over the entire surface.
• Let them cook for a minute or two, then gently stir everything together to mix the eggs in.
5. Add Cheese:
• Once the eggs are mostly cooked, sprinkle shredded cheese generously over the top.
• Close the griddle lid (if available) to help the cheese melt.
6. Serve Hot:
• Use a spatula to serve in portions.
• Optional toppings: green onions, hot sauce, salsa, or sour cream.
