Ingredients
1 lb. ground chorizo
1 large russet potato, diced
4 strips bacon, diced
6 eggs
2 Cups shredded cheddar cheese
2 Cups shredded Oaxaca cheese
6 large tortillas
Instructions
Preheat griddle to medium heat.
Dice up large russet potato (or two smaller potatoes) into 1/2 inch pieces. Also dice bacon into 1″ pieces.
On the griddle, bring diced potatoes and cook first. Then bring on chorizo sausage and diced bacon. Cook ingredients until done. Finish bacon a little before it gets crispy so it doesn’t overcook later.
Cook scrambled eggs until done.
Combine chorizo, potatoes, bacon, and eggs altogether on griddle. Sprinkle shredded cheddar and Oaxaca cheeses on top and mix.
Fold cooked ingredients into center of a large flour tortilla and fold into a burrito.
Griddle the burrito on top and bottom for at least 30 seconds or until the desired brown crust is formed. Serve and enjoy!
Notes
This chorizo breakfast burrito recipe can be done in a large skillet instead of on a griddle. Cooking times will vary as you’ll need to cook items individually instead of all at once.
Add ingredients such as avocado and salsa into burrito before folding.
Large flour tortillas should be 10-12″. You can use smaller tortillas which will make more.
Measuring surface temps on your griddle is best done using an infrared thermometer.
