Ingredients:
Smucker’s Uncrustables (peanut butter & jelly, or your favorite flavor)
1 cup pancake mix (or funnel cake mix)
2/3 cup water (adjust for batter consistency)
1–2 tbsp sugar (optional, for sweetness)
Oil for frying (vegetable or canola works best)
Powdered sugar, cinnamon sugar, or chocolate drizzle (optional toppings)
Instructions:
1. Heat oil: In a deep pan or fryer, heat oil to about 350°F (175°C).
2. Mix batter: In a bowl, whisk pancake mix, water, and sugar until smooth (batter should be slightly thick, like for funnel cake).
3. Dip the Uncrustables: Take each frozen or chilled Uncrustable and coat it completely in the batter.
4. Fry: Carefully place into the hot oil. Fry 2–3 minutes per side until golden brown and crispy.
5. Drain & cool: Remove and place on paper towels to drain excess oil.
6. Finish: Dust with powdered sugar, cinnamon sugar, or drizzle with chocolate/caramel if you like.
