Ingredients:
1 lb ground beef
1 packet taco seasoning (or your own mix)
1/2 cup water
6–8 flour tortillas
1–2 cups shredded cheddar cheese
1 cup enchilada sauce (canned or homemade)
Cooking oil or spray (for the griddle)

Instructions:
1. Preheat the Blackstone:
Heat your griddle to medium-high.
2. Cook the Beef:
Add a bit of oil to the griddle.
Brown the ground beef until no longer pink.
Mix in taco seasoning and water. Let it simmer until thickened.
Slide to a cooler zone or low heat area to keep warm.
3. Prepare Tortillas:
Warm tortillas briefly on the griddle to soften.
Lightly dip or brush each tortilla with enchilada sauce.
4. Assemble Enchiladas:
Spoon seasoned beef into each tortilla.
Sprinkle a bit of cheese inside.
Roll them up and place seam-side down on the griddle.
5. Cheese & Heat:
Spoon a little extra enchilada sauce on top.
Cover each with a handful of shredded cheese.
Let them cook until cheese is melted and tortillas are golden/browned underneath (about 5–7 mins).
6. Serve Hot:
Use a spatula to remove carefully. Garnish with sour cream, cilantro, or jalapeños if you like!
