Full Asian Griddle Feast: Chicken Lo Mein, Saucy Beef, & Fried Rice

1. Chicken & Broccoli Lo Mein (Left Side of Griddle)
Yields: 4-6 servings
Prep time: 20 min
Cook time: 15-20 min
Ingredients:
For the Chicken Marinade:
1 lb boneless, skinless chicken thighs or breasts, thinly sliced
1 tbsp soy sauce
1/2 tbsp Shaoxing wine (or dry sherry)
1/2 tsp cornstarch
Pinch of white pepper
For the Lo Mein Sauce:
1/4 cup soy sauce (low sodium preferred)
2 tbsp oyster sauce
1 tbsp dark soy sauce (optional)
1 tbsp Shaoxing wine
1 tbsp sugar
1/2 tbsp rice vinegar
1/2 tbsp sesame oil
1/2 tsp white pepper
1/2 tbsp cornstarch (mixed with 1 tbsp cold water)
Other Lo Mein Ingredients:
1 lb fresh Lo Mein noodles, cooked al dente, drained, and tossed with 1 tbsp sesame oil
1 tbsp cooking oil (vegetable, canola, or peanut)
1/2 large yellow onion, thinly sliced
3 cups broccoli florets, bite-sized (blanch quickly first for best results)
3 cloves garlic, minced
1-inch piece ginger, minced
2 green onions, sliced (for garnish)
Instructions (Griddle – Left Zone):
Marinate Chicken: Combine chicken with marinade ingredients.
Cook Noodles: Cook and prep noodles as directed above.
Mix Lo Mein Sauce: Combine all sauce ingredients; set aside.
Cook Chicken: Heat left side of griddle to medium-high. Add 1 tbsp oil. Cook chicken until browned and cooked through, about 5-7 mins. Remove and set aside.
Stir-fry Veggies: Add onion and blanched broccoli. Stir-fry 3-5 mins until tender-crisp. Add garlic and ginger, stir-fry 30 seconds until fragrant.
Combine Lo Mein: Add cooked noodles and chicken back to the griddle with the vegetables. Whisk sauce slurry, pour over ingredients. Toss well with spatulas until everything is coated and hot. Push to a warmer, less active part of the griddle.
2. Saucy Beef with Mushrooms (Center of Griddle)
This recipe is for a general “beef with sauce” that looks similar to what’s in your picture.
Yields: 4-6 servings
Prep time: 20 min
Cook time: 15-20 min
Ingredients:
For the Beef Marinade:
1 lb flank steak or sirloin, thinly sliced against the grain
1 tbsp soy sauce
1 tbsp Shaoxing wine
1 tsp cornstarch
1/2 tsp baking soda (optional)
1/2 tsp sesame oil
For the Sauce:
1/2 cup beef broth
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp dark soy sauce (optional)
1 tbsp Shaoxing wine
1 tbsp brown sugar
1/2 tsp white pepper
1/2 tbsp cornstarch (mixed with 1 tbsp cold water)
Other Beef Ingredients:
2 tbsp cooking oil
1 large bell pepper (any color), sliced
8 oz cremini mushrooms, sliced
2 cloves garlic, minced
1/2-inch piece ginger, minced
1/2 large yellow onion, sliced
Instructions (Griddle – Center Zone):
Marinate Beef: Combine beef with marinade ingredients.
Mix Sauce: Combine all sauce ingredients; set aside.
Cook Beef: Heat center of griddle to medium-high. Add 1 tbsp oil. Cook beef in a single layer until seared and cooked through, 2-3 minutes per side. Remove and set aside.
Sauté Aromatics & Veggies: Add remaining 1 tbsp oil. Add sliced onion, bell pepper, and mushrooms. Cook 5-7 minutes until softened. Add garlic and ginger, cook 30 seconds.
Combine & Sauce: Return beef to the griddle with the vegetables. Whisk sauce slurry, pour over. Stir constantly until sauce thickens and coats everything. Push to a warmer, less active part of the griddle.
3. Fried Rice (Right Side of Griddle)
Yields: 4-6 servings
Prep time: 15 min
Cook time: 10-15 min
Ingredients:
4-5 cups cooked, cold day-old white rice (essential for good fried rice texture)
2-3 tbsp cooking oil
1/2 large yellow onion, diced
1 cup mixed frozen vegetables (peas, carrots, corn)
2 large eggs, lightly beaten
3 tbsp soy sauce (or to taste)
1 tbsp oyster sauce (optional)
1 tsp sesame oil
1/2 tsp white pepper
2 green onions, sliced (for garnish)
Instructions (Griddle – Right Zone):
Prep Rice & Veggies: Ensure rice is cold. Have diced onion and frozen veggies ready.
Cook Eggs: Heat right side of griddle to medium. Add 1 tbsp oil. Pour beaten eggs onto griddle, scramble quickly. Once cooked, chop into small pieces with spatulas. Push to side.
Sauté Aromatics & Veggies: Add another 1-2 tbsp oil to the clear space. Add diced onion and stir-fry for 2-3 minutes. Add mixed frozen vegetables, stir-fry until heated through, about 3-5 minutes.
Add Rice: Add the cold rice to the griddle. Break it up with your spatulas. Mix with vegetables and scrambled egg. Spread it out on the griddle surface to get some slight crisping.
Season: Pour soy sauce, oyster sauce (if using), sesame oil, and white pepper over the rice. Toss everything thoroughly until well combined and heated through.
Garnish & Serve: Stir in sliced green onions right before serving.
Assembling Your Feast:
Once all three dishes are cooked, you can either serve them directly from the griddle (as shown in your picture) or transfer them to serving platters.
