Hash Brown Omelette

This crispy, savory Hash Brown Omelet is the ultimate hearty breakfast—packed with golden hash browns, sautéed veggies, hearty ham, farm-fresh eggs, and melty cheese. It’s easy to make on a Blackstone Griddle with my simple tips for success

Ingredients

  • Eggs 2 each
  • Heavy Cream 1 tablespoon
  • Peppers, Diced 2 tablespoons
  • Onion, Diced 1 tablespoon
  • Mushroom, Diced 2 tablespoons
  • Ham, Diced 1/4 cup
  • Shredded Potatoes 1 cup
  • Shredded Cheese, Colby Jack 1/2 cup
  • Salt and Pepper

Instructions

    1. Preheat the Blackstone Griddle:  Preheat your Blackstone griddle on medium/low.  When using an electric Blackstone griddle, set the temperature to 350°F.
    2. Gather the Ingredients:  You’ll need eggs, shredded potatoes, vegetables such as peppers, onions, and mushrooms.  The meat of your liking such as sliced ham, cooked crumbled bacon, or sausage.  You will also want shredded Colby cheese, salt, pepper, and any other toppings of your choice.
    3. Prepare Your Omelet Ingredients:  Chop the vegetables into small chunks.  This helps to sauté the vegetables quickly before making the omelet.

Griddle Grilled Hash Brown Omelet

    1. Cook the Shredded Potatoes:  Add oil to the hot griddle and spread around with your griddle spatula.  Place the shredded potatoes of your choice in a thin even layer and cook until golden brown.  Once the bottom is cooked flip over to crisp up the other side.  If needed, add a drizzle of oil over the top of the hash browns.
    2. Sauté the Toppings:  While the shredded potatoes are cooking on the griddle, add the diced vegetables and meat of your choice to another part of the flat top  Sauté the veggies until tender.  Next, top the crispy hash browns with the cooked meat and vegetables.
    3. Scrambled Eggs: In another bowl, combine the eggs, a splash of heavy cream, salt, and pepper until well combined.  Pour the eggs evenly over the top, covering the entire surface of the hash browns, meat, and vegetables.
    4. Cook Omelet:  The egg mixture will soak into the hash browns.  Let the eggs cook.  If needed, use a dome lid to help the scrambled eggs cook.
    5. Add the Cheese:  Sprinkle shredded cheese on top of the hash brown omelette.
    6. Fold the Omelette:  When the scrambled eggs are fully cooked and the cheese is melted, fold the hash brown omelet in half.  Place it onto a plate, garnish with some more shredded cheese, and serve right away.
