Kung pao chicken on the Blackstone griddle

ngredients:
Cut 4-5 boneless skinless chicken thighs into 1″ cubes
Dice 1 large red bell pepper
Dice 1 large yellow onion
Cut 5-6 scallions into 3/4 inch lengths
1/4 cup peanuts
1 Tbs minced ginger
1 Tbs minced garlic
8-10 dry red chili peppers
1 Tbs oyster sauce
1 Tbs soy sauce
2 Tsp corn starch
Chicken marinade:
1Tbs Oyster sauce
1 Tbs Soy sauce
2 Tsp Corn starch
1 Tsp pepper
Directions
Roast peanuts until golden brown (remove for later)
Cook chicken on medium high heat for 2-3 minutes each
side (remove for later)
Saute minced garlic, ginger, dry red peppers for 1 minute
Add red bell pepper and onions and cook for 1 minute
Add chicken and sauce and cook for 2 minutes
Add peanuts and scallions, mix thoroughly. Then serve!!
