Lowcountry Stir Fry

Ingredients:
For the Cabbage:
1 large head of green cabbage, cored and roughly chopped or sliced into 1-inch pieces
2-3 tablespoons olive oil or butter (or a mix)
1 medium yellow onion, chopped (optional, but adds flavor)
2-3 cloves garlic, minced
Salt and black pepper to taste
1/2 – 1 teaspoon paprika (smoked or sweet, for color and flavor)
1/2 teaspoon onion powder
(Optional) Pinch of red pepper flakes for heat
For the Sausage:
1 lb smoked sausage (e.g., Kielbasa, Andouille, or any pre-cooked smoked sausage), sliced into 1/4 to 1/2-inch rounds
For the Shrimp:
1 lb large shrimp, peeled and deveined, tails on or off
1-2 tablespoons olive oil
1 teaspoon Old Bay seasoning (or a Creole/Cajun seasoning blend)
1/2 teaspoon garlic powder
Salt and pepper to taste
Equipment:
Large griddle or a very large skillet/wok
Instructions:
Prepare the Ingredients:
Chop the cabbage, onion (if using), and mince the garlic.
Slice the smoked sausage.
Pat the shrimp dry with paper towels. In a bowl, toss the shrimp with 1-2 tbsp olive oil, Old Bay (or Creole/Cajun seasoning), garlic powder, salt, and pepper. Set aside.
Cook the Cabbage & Onion:
Preheat your griddle or large skillet over medium-high heat.
Add 2-3 tablespoons of olive oil/butter to the griddle.
Add the chopped onion (if using) and sauté for 3-5 minutes until softened.
Add the chopped cabbage to the griddle. Season with salt, pepper, paprika, and onion powder.
Cook the cabbage, stirring occasionally, for 10-15 minutes, or until it starts to soften and get some nice caramelized brown spots. The cooking time will depend on how tender you like your cabbage. If it’s drying out too much, you can add a splash of water or broth.
Once the cabbage is mostly cooked to your liking, make a space in the center or push the cabbage to one side.
Cook the Sausage:
Add the sliced smoked sausage to the griddle. Cook for 5-7 minutes, turning occasionally, until it’s nicely browned and slightly crispy on the edges.
Once the sausage is cooked, you can mix it in with the cabbage.
Cook the Shrimp:
Make another clear space on the griddle (or push everything to one side).
Add the seasoned shrimp to the hot griddle. Cook for 2-3 minutes per side, or until the shrimp turn pink and opaque. Be careful not to overcook, as shrimp cook quickly and can become tough.
Combine and Serve:
Once the shrimp are cooked, gently toss all the ingredients together on the griddle to combine.
Taste and adjust seasonings if needed.
Serve hot!
