Pancake Sausage Breakfast Bake – Sweet, Savory

This Pancake Sausage Breakfast Bake combines the comforting flavors of pancakes, savory sausage, and a creamy egg custard in one easy-to-make casserole. It’s perfect for feeding a crowd or enjoying as an indulgent breakfast-for-dinner treat. With its golden crust, fluffy interior, and irresistible combination of sweet and salty, this bake is sure to become a family favorite!

Ingredients
For the Pancake Layer
1 cup all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup milk (whole milk or buttermilk for richness)
2 large eggs
2 tablespoons unsalted butter, melted
For the Sausage
1 lb breakfast sausage (bulk or removed from casings), cooked and crumbled
1 small onion, finely chopped (optional, for added flavor)
For the Custard Mixture
4 large eggs
1 cup heavy cream (or half-and-half for lighter richness)
1 teaspoon vanilla extract (for subtle sweetness)
Salt and freshly ground black pepper, to taste
For Assembly
Cooking spray or butter, for greasing the pan
Fresh maple syrup, powdered sugar, or hot sauce (for serving)
Instructions
Step 1: Prepare the Pancake Batter
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Add the milk, eggs, and melted butter to the dry ingredients. Stir until smooth and set aside.
Step 2: Cook the Sausage
In a skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into small pieces as it cooks.
If using onions, add them during the last few minutes of cooking. Drain any excess grease and set aside.
Step 3: Make the Custard
In another mixing bowl, whisk together the eggs, heavy cream, vanilla extract, salt, and pepper until well combined. Set aside.
Step 4: Assemble the Bake
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
Pour half of the pancake batter into the prepared dish, spreading it evenly across the bottom.
Sprinkle the cooked sausage mixture evenly over the pancake layer.
Pour the remaining pancake batter over the sausage, ensuring everything is covered.
Drizzle the custard mixture evenly over the top of the batter.
Step 5: Bake
Place the baking dish in the preheated oven and bake for 35–40 minutes, or until the edges are golden brown and the center is set.
If desired, broil for an additional 1–2 minutes at the end to achieve a crispier top. Watch carefully to avoid burning.
Step 6: Serve
Remove the bake from the oven and let it cool slightly before slicing.
Serve warm with fresh maple syrup, powdered sugar, or hot sauce on the side for dipping.
