If you’re looking for a way to turn your backyard brunch into a tropical getaway, these Pineapple Upside Down Pancakes on the Blackstone griddle are your new obsession.
Ingredients
1 ½ cups pancake mix (any boxed mix or your favorite homemade recipe)
1 cup water or milk (dairy-free if needed)
1 egg
1 tsp vanilla extract
½ tsp cinnamon (optional)
1 can pineapple slices (drained and patted dry)
¼ cup brown sugar
2 tbsp butter or vegan butter
Maraschino cherries (optional but cute!)
Cooking spray or Blackstone oil
Instructions
In a bowl, mix the pancake batter: pancake mix, water (or milk), egg, vanilla, and cinnamon.
Lightly oil the griddle and melt butter in small rounds (where you’ll place the pineapple). Add a pineapple slice (or chunks) to the melted butter and sprinkle with a bit of brown sugar. (Optional) Place a cherry in the center of each ring 🍒
Pour ¼ cup pancake batter gently over each pineapple ring, letting it spread. Cook for about 2–3 minutes, until bubbles form and edges start to firm.
Flip carefully and cook another 2–3 minutes, until golden brown.Serve warm with extra butter, syrup, or a drizzle of pineapple juice glaze!
Notes
Make sure your pineapple is dry before putting it on the griddle — too much moisture can keep it from caramelizing.
