Ingredients:
For the Pancakes:
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
½ teaspoon baking soda
Pinch of salt
¾ cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
For the Burger:
4 slices of bacon, cooked until crispy
2 large eggs
2 burger patties (beef or chicken, as preferred)
4 slices of cheddar cheese
Maple syrup (for drizzling)
Directions:
Prepare the Pancakes:
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the buttermilk, egg, and melted butter. Gradually mix the wet ingredients into the dry ingredients until just combined. Heat a non-stick skillet over medium heat and cook small pancakes (about 4 inches in diameter) until golden brown on both sides. Set aside.
Cook the Burger Patties:
Season the burger patties with salt and pepper. In a skillet or grill pan over medium heat, cook the patties for 4-5 minutes on each side or until cooked to your liking. Add a slice of cheddar cheese on top of each patty in the last minute of cooking to melt.
Prepare the Eggs:
In the same skillet, cook the eggs sunny-side-up or to your preferred style.
