Who says you can’t have cake for breakfast? Pineapple upside-down in a pancake? Yes please!

Ingredients:
- 1 Box Yellow or White Cake Mix
- 1 Can Pineapple Tidbits
- 1 Cup Brown Sugar
- 1/2 Cup Caramel Sauce Ice Cream Topping Works Great

Prepare the cake mix in large mixing bowl according to the package instructions. Preheat a griddle or pan. Spray the griddle or pan with cooking spray. Pour a small amount of cake batter on the griddle to form a pancake about 4 inches wide.

Let the pancake cook until it starts to brown. Put pineapple tidbits on top of each pancake, and sprinkle with brown sugar. I usually do about 1 Tbsp per pancake. When the pancake it browned enough to flip, carefully flip it. Let the other side cook, until the pancake it cooked completely. Carefully remove the pancake from the griddle and flip back over onto a plate, so the side with the pineapple is showing. Top with a drizzle of caramel sauce, and enjoy!
