Ingredients:
For the Smash Patties:
1.5 lbs ground beef (80/20)
Salt and black pepper to taste
1 tsp garlic powder
Vegetable oil for cooking
For the Sauce:
1/2 cup mayonnaise
1 tbsp ketchup
1 tbsp hot sauce (like sriracha)
1 tsp mustard
1/2 tsp smoked paprika
1/2 tsp garlic powder
Salt to taste
For Assembly:
4 sesame seed burger buns, buttered and toasted
8 slices bacon, cooked until crispy
4 slices American or cheddar cheese
1 cup shredded iceberg lettuce
Optional: sliced pickles or onions
Instructions:
Make the Sauce:
In a small bowl, whisk together mayo, ketchup, hot sauce, mustard, paprika, garlic powder, and a pinch of salt. Chill until ready to use.
Cook the Bacon:
In a skillet or oven, cook bacon until crispy. Drain on paper towels.
Prepare the Patties:
Divide beef into 8 equal balls (about 3 oz each). Heat a cast-iron skillet or griddle over high heat. Lightly oil the surface. Place 2 balls per burger on the hot surface and smash flat with a spatula. Season with salt, pepper, and garlic powder. Cook 2–3 minutes until edges are crispy. Flip, add cheese on one patty, and cook 1–2 minutes more. Stack patties (cheese side up) for each burger.
Toast the Buns:
Butter and toast buns on a skillet until golden brown and glossy.
Assemble the Burger:
Spread spicy sauce on bottom bun. Add shredded lettuce, double smash patty stack, crispy bacon, more sauce, and top with the bun.
Serve:
Serve hot, with extra sauce on the side and fries or onion rings if desired. Perfect straight off the grill.
