Ingredients:
3–4 green tomatoes, sliced ¼-inch thick
1 cup all-purpose flour
2 large eggs
2 tbsp milk or buttermilk
1 cup panko breadcrumbs (for extra crunch)
½ cup cornmeal (optional for extra texture)
½ tsp garlic powder
½ tsp paprika
Salt & black pepper to taste
Oil or butter for the griddle
👨🍳 Instructions:
1. Preheat the griddle to medium heat.
2. Prep your stations:
Plate 1: Flour + a little salt/pepper.
Bowl 2: Whisk eggs with milk.
Plate 3: Mix panko breadcrumbs, cornmeal (if using), garlic powder, paprika, and more salt/pepper.
3. Coat the tomatoes:
Dredge each tomato slice in flour.
Dip in the egg wash.
Coat with the seasoned panko mix. Press lightly so the crumbs stick well.
4. Griddle time:
Add a thin layer of oil or butter on the griddle.
Place coated tomato slices on the hot surface.
Cook for 3–5 minutes per side, until golden brown and crispy.
5. Serve hot!
Optional: drizzle with ranch, spicy mayo, or a sprinkle of parmesan cheese.
