This looks like fried rice cooked on a Blackstone griddle! Here’s a classic and easy fried rice
Ingredients:
4 cups cooked and cooled rice (preferably day-old)
2 tablespoons vegetable oil (or sesame oil for extra flavor)
2 eggs (optional, scrambled on the griddle)

2–3 tablespoons soy sauce (to taste)
1 teaspoon garlic (minced, optional)
Salt and pepper to taste
Optional add-ins: green onions, cooked chicken, shrimp, or beef

Instructions:
1. Preheat the Griddle
Heat your Blackstone griddle to medium-high heat and lightly oil the surface.
2. Cook the Vegetables
Add a bit of oil, then toss on the frozen peas and carrots. Stir frequently until they begin to soften.
3. Scramble the Eggs (if using)
Move the veggies to one side. Crack the eggs directly onto the griddle and scramble them. Once cooked, mix them with the veggies.
4. Add the Rice
Add the cooked rice to the griddle. Break it apart gently and mix it with the veggies and eggs.
5. Season
Pour soy sauce over the rice mixture and stir well to evenly coat everything. Add garlic, salt, and pepper to taste.
6. Cook Until Slightly Crispy
Let the rice sit in place for a minute or two for a nice crust, then stir again. Repeat as desired.
7. Serve Hot
Garnish with green onions if you like, and serve immediately!
