Blackstone Griddle Grilled Butternut Squash

Blackstone Griddle Grilled Butternut Squash is a fast, flavorful side dish that’s as versatile as it is delicious. Whether you prefer it savory or with a touch of sweetness, this easy griddled squash is sure to complement any meal.

Ingredients

  • Butternut Squash, cut, peeled and small diced 4 cups
  • Olive Oil 1 teaspoon

Instructions

  1. Wash and carefully cut the butternut squash into workable pieces.
  2. Using a cutting board, cut the squash in half, the long way and cut those two pieces in half again. Finally, cut all four pieces in half the short way.
  3. Peel all the squash with a peeler or a knife. Discard all the peelings.
  4. With a large spoon, clean the seeds out of the bottom pieces. Dispose the seed guts.
  5. Finish off by cutting each of the butternut squash pieces into a small dice.
  6. Preheat your Blackstone Griddle to the lowest setting. When the Blackstone Griddle is hot, place a THIN of olive oil (or oil of your choice) onto the griddle.
  7. Place the diced butternut squash pieces on top of the hot oiled griddle.
  8. With a griddle spatula, toss the squash pieces to coat the oil.
  9. Season with salt and pepper.
  10. Using a squeeze bottle of water, squirt about 2 tablespoons of the water around and on top of the squash.
  11. Cover the diced squash with a dome lid right away to trap the steam from the water.
  12. Cook for several minutes.
  13. Uncover and toss the butternut squash with a spatula.
  14. Continue cooking the squash with a dome lid and add more water until the desired doneness is achieved.
  15. Some like their squash firm and al dente. Others like their squash tender and soft.
  16. If you would like a sweet squash then add a tablespoon or two of brown sugar on top of the cooked squash. Season with cinnamon or nutmeg. Cook until the brown sugar starts to bubble. Toss all ingredients with a spatula.
  17. Remove from the griddle and place in a serving dish.
