Ingredients (for 4 burgers):
1 lb (450 g) ground beef (80/20 works best)
1 pack brioche or hamburger buns
8 oz (225 g) mushrooms, sliced (baby bella or white mushrooms work great)
4 slices Swiss cheese (or provolone if you prefer)
1 small onion, sliced (optional)
2 tbsp butter
1 tbsp olive oil (or more as needed)
Salt & black pepper (to taste)
Garlic powder (optional, for extra flavor)
Instructions:
1. Preheat your Blackstone griddle to medium-high heat.
2. Cook the mushrooms:
Add butter and a splash of olive oil to the griddle.
Toss in the sliced mushrooms (and onions if using).
Season with salt, pepper, and a pinch of garlic powder.
Cook until soft and golden brown, about 5–7 minutes. Move them to the side.
3. Toast the buns:
Place the buns cut side down on the griddle until golden and lightly crispy. Remove and set aside.
4. Cook the burger patties:
Form the ground beef into 4 equal patties (slightly larger than the buns, since they’ll shrink).
Season both sides with salt and pepper.
Place on the hot griddle and cook 3–4 minutes per side, until your desired doneness.
5. Melt the cheese:
In the last minute of cooking, place a slice of Swiss cheese on each patty.
Cover with a dome lid or metal bowl to help the cheese melt.
6. Assemble the burgers:
Bottom bun → burger patty with melted Swiss → sautéed mushrooms (and onions) → top bun.
Optional Add-ons:
A smear of garlic aioli or mayo on the bun.
A little steak sauce or Worcestershire in the mushrooms for extra depth.
