Ingredients:
1 lb (450g) ground chicken
1/2 tsp garlic powder
1/2 tsp onion powder
Salt & black pepper to taste
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs (optional for extra texture)
1 tbsp olive oil or butter for the griddle
🍅 For Topping:
Marinara or pizza sauce (warmed)
Fresh mozzarella or provolone cheese slices
Fresh basil (optional)
Toasted brioche buns or sandwich rolls
🍳 Instructions:
1. Prep the Chicken Patties:
In a bowl, mix ground chicken, Parmesan, garlic powder, onion powder, salt, pepper, and breadcrumbs (if using).
Form 4 small loosely packed balls (about 1/4 lb each).
2. Heat the Blackstone:
Set to medium-high heat.
Add olive oil or butter.
3. Smash & Cook:
Place chicken balls on the hot griddle.
Use parchment paper and a heavy spatula or press to smash them thin.
Cook 3–4 min per side, or until golden brown and fully cooked.
4. Add Sauce & Cheese:
Spoon a little warm marinara on each patty.
Top with mozzarella or provolone cheese.
Cover with a dome to melt cheese (or add a splash of water under dome for steam).
5. Toast the Buns:
Toast your buns cut side down until golden.
6. Assemble:
Bun bottom → chicken parm patty → extra marinara (optional) → basil → bun top.
✅ Tips:
Make it spicy with red pepper flakes in the sauce.
Want it crispy? Add a parmesan crust by sprinkling cheese on the griddle and pressing patty into it.
