Blackstone Smashed Potatoes (Cheese & Bacon)

alex May 2, 2025

Blackstone Smashed Potatoes are the ultimate side dish—crispy on the edges, golden brown, and loaded with melted cheese and crunchy bacon. Cooked to perfection on a Blackstone Flat Top Griddle, they deliver unbeatable texture and flavor in every bite.

Pre-Cook Time 30 minutes
Cook Time 20 minutes
Total Time 50 minutes

Ingredients

  • Potatoes, Baby 1 1/2 pounds
  • Salt 1 teaspoon
  • Olive Oil 4 tablespoons
  • Butter 4 tablespoons
  • Simply Three Seasoning. 1 teaspoon
  • Cheese, Shredded 1 cup
  • Bacon Bits 1/2 cup

Instructions

  1. Gently boil the baby potatoes (add salt to the water) in a pot over medium heat for 30 minutes. Drain all the water from the pot and return to the stove. Cook off all the remaining water from the mini potatoes.
  2. Preheat the Blackstone Flat Top Griddle to medium/high heat.
  3. Add 2 tablespoon each of the olive oil and the butter to the griddle. With a griddle spatula, spread around to combine. Arrange the baby boiled potatoes on th griddle top. Using the bottom of your griddle spatula, mash each potato. Let the smashed potatoes cook until crispy. Flip each one over and continue to cook. Add the rest of the oil and butter around the smashed potatoes if needed.
  4. When the smashed potatoes are fully cooked, season with your favorite seasoning. Toss to combine all ingredients.
  5. Sprinkly the bacon pieces over top of the cooked potatoes. Next, top with the shredded cheese. Continue to cook until the cheese is all melted. Transfer the loaded potatoes to a serving dish. Serve hot.

Notes

Loaded smashed potatoes can be made in a saute pan on the stove instead of a Blackstone Griddle.

Do not use a dome lid when cooking smashed potatoes because the moisture will not allow the potatoes to become crispy.

Store leftover loaded smashed potatoes in an airtight container in the fridge for up to 6 days.
