Ingredients:
1 lb ground beef (80/20 works best)
½ tsp salt
½ tsp black pepper
½ tsp garlic powder (optional)
1 medium onion, finely minced (or riced onion like in the photo)
1 pack of slider buns (soft dinner rolls work too)
Slices of American cheese (optional)
Dill pickle slices (optional)

Instructions:
1. Prepare the beef:
Mix ground beef with salt, pepper, and garlic powder.
Spread it thinly on a sheet of parchment paper into a rectangle (about ¼ inch thick).
Cut into small squares (about the size of your buns).
Use a straw or the back of a spoon to poke 5 little holes in each patty (this helps them steam evenly like the original White Castle burgers).
2. Cook the onions:
Heat your griddle on medium.
Spread the minced onions all over the cooking surface with a little water to steam them.
3. Steam the burgers:
Place the beef squares directly on top of the onions (holes side down first).
The onions and steam will cook the burgers from below. No need to flip!
4. Toast the buns:
Place the bottom halves of the buns directly on top of each burger while it cooks.
Cover with a dome lid or sheet pan for 3–4 minutes until the meat is cooked through.
5. Assemble:
Add cheese and pickles if desired.
Place the top bun on, scoop burger + onions + bottom bun off the griddle, and serve hot.
