Ingredients:
2–3 lbs thin fish fillets (tilapia, cod, catfish, etc.)
2 cups buttermilk (or milk + 1 tbsp lemon juice)
Hot sauce (optional, for marinade)
2 cups fish fry breading mix or cornmeal/flour blend
1 tsp garlic powder
1 tsp paprika
Salt & pepper to taste
Oil for frying (peanut oil or vegetable oil)
🔥 Instructions:
1. Marinate the Fish:
Soak fish fillets in buttermilk with a few dashes of hot sauce.
Let it sit 30 minutes to 1 hour in the fridge.
2. Bread the Fish:
In a tray, combine fish fry mix or a blend of:
1 cup cornmeal
1 cup flour
Garlic powder, paprika, salt, pepper
Dredge marinated fish in the dry mix, coating both sides well.
Let it rest on a tray while oil heats.
3. Set Up the Blackstone:
Place 2 foil pans on the griddle.
Fill each pan 1–2 inches deep with oil.
Turn Blackstone burners to medium heat under the pans.
Heat oil to 350–375°F (175–190°C).
4. Fry the Fish:
Gently place fish fillets into the hot oil.
Fry 3–5 minutes per side, depending on thickness.
Fish is done when golden brown and crispy.
Remove and drain on paper towels or a wire rack.

Tartar Sauce: Mayo, pickles, lemon juice, a little mustard.
Serve with: Fries, tater tots (like in your last pic), slaw, or on a sandwich bun.
