Ingredients:
For the Steak:
1-1.5 lbs thin-cut steak (like sirloin, flank, or skirt steak), cut into strips
1-2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika (smoked or sweet)
1/2 tsp dried oregano
1/2 tsp cumin (optional)
Salt and black pepper to taste
(Optional) Pinch of cayenne pepper for a little heat
For the Fries:
3-4 large Russet potatoes
2-3 tbsp olive oil (or other high-heat cooking oil)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
(Optional) Pinch of paprika or other seasoning blend
Instructions:
Prepare the Steak:
Pat the steak strips dry with paper towels.
In a bowl, toss the steak strips with olive oil, garlic powder, onion powder, paprika, oregano, cumin (if using), salt, and pepper. Make sure all strips are well coated.
Let the steak marinate at room temperature for at least 15-20 minutes, or in the refrigerator for up to a few hours.
Prepare the Fries:
Preheat your oven to 400°F (200°C).
Wash the potatoes thoroughly. You can peel them or leave the skin on for a rustic look (as in your picture, it looks like the skin is on).
Cut the potatoes into thick, fry-like wedges or sticks (about 1/2 inch thick).
In a large bowl, toss the cut potatoes with olive oil, salt, pepper, and garlic powder (and any other desired seasonings).
Spread the seasoned fries in a single layer on a baking sheet, ideally lined with parchment paper or foil for easy cleanup. Don’t overcrowd the pan, as this will steam the fries instead of making them crispy. Use two pans if necessary.
Bake for 20-30 minutes, flipping halfway through, until they are golden brown and crispy. Baking time can vary depending on thickness and your oven.
Cook the Steak:
While the fries are baking, heat a large skillet or cast-iron pan over medium-high heat until it’s very hot (a drop of water should sizzle and evaporate quickly).
Add the marinated steak strips in a single layer, being careful not to overcrowd the pan. You may need to cook in batches.
Sear the steak for 2-3 minutes per side for medium-rare to medium, or longer if you prefer it more well-done. The goal is a nice sear on the outside and tender inside.
Remove the cooked steak from the pan and set aside.
Combine and Serve:
Once the fries are done, remove them from the oven.
You can either mix the cooked steak directly with the fries on the baking sheet or arrange the fries on a platter and top generously with the steak, similar to your image.
