Ingredients:
4 slices of thick-cut bacon
2 tablespoons maple syrup
4 large eggs
4 slices of cheddar cheese
2 English muffins, split and toasted
1 tablespoon butter
Salt and black pepper to taste
1/4 teaspoon smoked paprika (optional)
2 tablespoons mayonnaise (optional)
Directions:
Preheat a skillet over medium heat. Cook the bacon until crispy, about 6-8 minutes. Remove from the skillet and drain on paper towels.
Brush each slice of bacon with maple syrup while still warm. Set aside.
In the same skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set, but the yolks are still slightly runny (or to your desired doneness). Season with salt, black pepper, and smoked paprika, if using.
Place a slice of cheddar cheese on top of each egg, allowing it to melt slightly.
Spread mayonnaise on the toasted English muffin halves (if using). Layer each sandwich with maple bacon, a cheesy egg, and top with the other half of the muffin.
Serve warm and enjoy!
