Grilled Surf and Turf Skewers with Chimichurri

Ingredients:
– 1 pound shrimp, peeled and deveined
– 1 pound beef steak (such as sirloin), cut into 1-inch cubes
– 1 red pepper, cut into 1-inch pieces
– 1 green pepper, cut into 1-inch pieces
– 1 onion, cut into 1-inch pieces
– 2 tablespoons olive oil
– Salt and pepper, to taste

For the Chimichurri:
– 1 cup fresh parsley, chopped
– 1/2 cup olive oil
– 1/4 cup red wine vinegar
– 4 cloves garlic, minced
– 1 teaspoon red pepper flakes
– Salt and pepper, to taste

Directions:
1. Preheat grill to medium-high heat.
2. In a bowl, combine shrimp and beef cubes. Drizzle with olive oil and season with salt and pepper. Toss with coating.
3. Thread shrimp, beef, and pepper and onion pieces onto skewers, alternating ingredients.
4. In a separate bowl, mix all chimichurri ingredients together. Adjust seasoning to taste.
5. Place skewers on grill and cook for about 8-10 minutes, turning occasionally, until shrimp are opaque and beef is cooked to your liking
6. Remove skewers from grill and drizzle with homemade chimichurri sauce.
7. Serve immediately and enjoy your delicious Grilled Surf and Turf Skewers!
