Blackstone Breakfast Hash with Eggs

Ingredients (4–6 servings)

4–5 medium potatoes, diced small

1 large onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

2–3 tbsp cooking oil or butter

1–2 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp chili powder (optional for spice)

Salt & black pepper to taste

6–8 large eggs

1 cup shredded cheese (cheddar works great)

Instructions

1. Preheat the griddle to medium heat.

2. Cook potatoes – Add a good layer of oil, spread diced potatoes out, season with salt, pepper, paprika, garlic powder, and onion powder. Cook 10–15 minutes, turning occasionally until golden and tender.

3. Add veggies – Toss in diced onions and peppers, cook until softened and slightly charred (about 5–7 minutes).

4. Form a ring – Push potatoes and veggies to the outside, leaving an open circle in the center.

5. Cook the eggs – Crack eggs into the center, scramble or leave whole (your choice). Sprinkle cheese over the eggs and let it melt.

6. Combine & serve – Once eggs are cooked to your liking, mix everything together or plate as-is.

Pro tip: You can add cooked bacon, sausage, or chorizo for extra flavor.
