Ingredients:
For the Stir-Fry:

1.5 – 2 lbs sirloin steak, thinly sliced against the grain (you can freeze it for 30 minutes to make slicing easier)

1.5 – 2 lbs large shrimp, peeled and deveined (fresh or thawed frozen)

2 large bell peppers (e.g., 1 red, 1 yellow), thinly sliced

1 large red onion, halved and thinly sliced

1 lb asparagus, tough ends trimmed, cut into 1-inch pieces

2 medium zucchini, halved lengthwise and sliced into 1/2-inch crescent moons

8 oz cremini mushrooms, sliced

1 cup broccoli florets (optional)

4-6 cloves garlic, minced
-
1-2 tbsp fresh ginger, grated (optional)

3-4 tbsp high-heat cooking oil (e.g., avocado, grapeseed, canola)

Salt and freshly ground black pepper to taste

Sesame seeds for garnish (optional)
For the Stir-Fry Sauce:

1/2 cup low-sodium soy sauce or tamari
-
1/4 cup oyster sauce (or hoisin sauce for a similar flavor profile)

2 tbsp rice vinegar
-
2 tbsp brown sugar or honey
-
1 tbsp sesame oil
-
1 tsp cornstarch (to thicken)

1/2 tsp red pepper flakes (optional, for heat)

Instructions:
1. Prepare the Ingredients:
* Steak: Pat the steak slices dry with paper towels. Season generously with salt and pepper.
* Shrimp: Pat the shrimp dry. Season lightly with salt and pepper.
* Vegetables: Slice all vegetables as directed. Keep them separated in bowls for now.
* Sauce: In a small bowl, whisk together all stir-fry sauce ingredients until well combined and the cornstarch is dissolved. Set aside.
2. Preheat the Griddle:
* Turn your Blackstone griddle to medium-high heat. Let it preheat for 5-10 minutes until it’s nice and hot. You should see a little smoke when you add oil.
3. Cook the Steak:
* Add 1-2 tablespoons of cooking oil to one section of the hot griddle.
* Spread the seasoned steak in a single layer over the oiled section. Cook for 2-3 minutes per side, or until browned and cooked to your desired doneness. Avoid overcrowding the griddle; cook in batches if necessary.
* Once cooked, push the steak to a cooler section of the griddle or remove to a plate and set aside.
4. Cook the Vegetables (Harder Vegetables First):
* Add another tablespoon of oil to the hot griddle.
* Start with the harder vegetables: Add the sliced bell peppers, red onion, and asparagus. Spread them out to get good contact with the griddle.
* Cook for 4-5 minutes, stirring occasionally with your spatulas, until they start to soften and get a slight char.
* Create a space in the middle, add the minced garlic and grated ginger (if using) and cook for 30 seconds until fragrant, then mix into the vegetables.
5. Add Softer Vegetables & Mushrooms:
* Add the zucchini and sliced mushrooms to the griddle with the other vegetables.
* Continue to cook for another 3-4 minutes, stirring frequently, until all vegetables are tender-crisp.
6. Cook the Shrimp:
* Push the vegetables to one side of the griddle.
* Add another tablespoon of oil to the open, hot section.
* Add the seasoned shrimp in a single layer. Cook for 1-2 minutes per side, or until they turn pink and opaque. Shrimp cook very quickly, so watch them closely!
7. Combine and Sauce:
* Return the cooked steak to the griddle with the vegetables and shrimp.
* Pour the whisked stir-fry sauce evenly over all the ingredients on the griddle.
* Using your spatulas, toss everything together quickly and thoroughly to coat evenly with the sauce. The sauce will thicken as it heats.
* Continue to cook for 1-2 minutes, stirring, until the sauce is bubbly and clings to the ingredients.
8. Serve:
* Immediately remove the stir-fry from the griddle.
* Garnish with sesame seeds if desired.
* Serve hot, ideally with steamed rice or noodles.
