Cheesy Garlic Zucchini Steaks

Ingredients:

2 medium zucchini

2 oz mozzarella cheese (shredded)

1 oz Parmesan cheese (grated)

2 cloves garlic, minced (or 1 tsp garlic powder)

1–2 tbsp olive oil

Salt & black pepper (to taste)

Fresh basil or parsley (for garnish, optional)

Instructions:

1. Prep the zucchini

Wash and slice the zucchini lengthwise into thick halves or “steaks”.

Score the flesh lightly with a knife (crosshatch pattern) so flavors sink in.

2. Season

Brush each zucchini half with olive oil.

Rub with minced garlic (or sprinkle garlic powder).

Season with salt and black pepper.

3. Roast

Preheat oven to 400°F (200°C).

Place zucchini on a baking sheet, cut side up.

Roast for about 12–15 minutes, until tender.

4. Add cheese

Remove from oven.

Sprinkle mozzarella and Parmesan evenly on top.

Return to oven and broil (or bake at high heat) for another 3–5 minutes, until cheese is bubbly and golden brown.

5. Garnish & serve

Sprinkle with fresh basil or parsley.

Serve hot as a side dish or a light main meal.
